Vanilla Cookie Dough Protein Energy Bites

Ok guys so I made these this weekend in preparation for the week and to have something easy to grab on the way to the gym or when my sweet tooth kicks in. TheIMG_5524y were really easy to make and it was a nice way to kind of clean out some of the stuff I have up in my cabinet. The preparation time for these is around 15-20 minutes and then I let mine cool in the freezer for at least 15 minutes before I dug in!
My boyfriend even liked these and anything “healthy” I make he’s hesitant to try or even admit to liking but these were a winner!

Vanilla Cookie Dough Protein Energy Bites

Prep Time: 15-20 minutes
  • 1/4 cup coconut oil
  • 1/4 cup nut butter (I used almond)
  • 1/4 cup honey
  • 1/8 cup almond milk
  • 1 tspn vanilla extract
  • 1 heaping scoop vanilla protein powder (I use BSN)
  • 2 Tbsp Flax powder (you can omit this and substitute for more protein powder or oats)
  • 1-1 1/2 cups of oats
  1. Begin by melting the oil, nut butter, honey, almond milk and vanilla in a pot over medium/low heat.
  2. Once a smooth consistency (with no nut butter globs) remove from heat and let cool Β for about a minute.
  3. Slowly mix in the protein powder and flax powder until smooth.
  4. Lastly add about a half a cup of oats and stir well and continue to add oats into it become a play dough like consistency.
  5. Roll into small balls (I like to put them into a plastic container for easy storage) and cool in the freezer for at least 15 minutes before eating!

And that’s it! And these are seriously so good! I also really liked that the protein powder is in there along with the additional protein in the nut butter, because who doesn’t need a little extra protein?! Bon appetite!

Besides making these in the afternoon, earlier that morning some of the girls from my small group and I went to church together to watch our friend get baptized at the mega church here in Louisville (seriously it has like four stories of seating!). It’s awesome how many people attend and this little girl sitting infant of us just pulled right at my heart strings with her new “Baptism Journal”! I just love Sundays! There’s something about resetting your heart in the morning and preparing for your week during the day that just does the body good!
